Although I don’t consider my daily meals to be particularly noteworthy, when I proposed this as a post idea on my Instagram Stories, the response was almost unanimously yes! This summer I’ve been on a major health kick trying to lose some weight before I head back to school (more on that later), so honestly my meals have been pretty boring. BUT, if your looking for some healthy and simple meal inspiration this post is for you!

Breakfast
Before this summer, I never would have considered myself to be a breakfast person; however I’ve slowly started to love the process of making myself breakfast. On this particular day I made myself a little breakfast pita pocket. I scrambled together one egg with one egg white, toasted half of a pita, and then put some sandwich turkey in it. I also had half a banana and always try and drink a whole bottle of water before I head out the door. Another breakfast I love is one scrambled egg on top of a slice of Dave’s Killer bread topped with Everything But The Bagel seasoning from Trader Joe’s.

Lunch
Breakfast is pretty much the only meal during the day where I eat carbs. Typically, I pack my lunch and bring it to work with me; however, on this particular day, we were pretty low on groceries so I bought a simple salad from the deli across the street from my office. The salad had grilled chicken breast, hard boiled egg, sliced tomato, parmesan cheese, and olive oil and vinegar for the dressing. It was super yummy and filling! When I pack my lunch, my go-to is romaine spears topped with mustard, avocado, and turkey.
Dinner
Dinner for me varies from night to night. Usually at the beginning of the week I’ll buy a rotisserie chicken from the market to carry me through the week. So, a typical dinner on a night where I’m staying home usually consists of chicken, some kind of veggie, and a small spinach salad with Trader Joe’s Green Goddess Dressing. If I go out I try to find something similar to that. Since I eat so much chicken when I’m at home, I like to order salmon/some kind of fish, a turkey burger, or red meat when I go out.
I promise I will get more into my weight loss journey in the near future, but for now I just want to focus on myself and getting to my goal before letting it all out into the world.
