Happy St. Patrick’s Day everybody! I hope you are all pulling out all the green you can find in your closets to avoid getting pinched today! I know I’ll surely be sporting a bright green ribbon in my hair and a necklace with a shamrock with my uniform. I’ve always thought St. Patrick’s Day was a really fun holiday. In elementary school I loved running around with my friends trying to avoid getting pinched by the boys and now I like just seeing everyone sporting their green and uniting in the holiday spirit! I mean why not look for any reason to celebrate!
Last night, I came upon this super yummy looking recipe for Lucky Charms cereal bars on a new favorite blog of mine “Sugar and Cloth.” Lucky Charms have been my favorite cereal for as long as I can remember. My favorite part of the cereal is (clearly) the marshmallows, but the actual cereal part is super delicious too. Nice and sugary… just the way I like things 🙂
The recipe is super straightforward and you don’t even have to do any baking!
Ingredients:
3 cups Lucky Charms cereal
3 cups Chex cereal (I would substitute for the Rice Chex instead, but it’s just personal preference)
10 oz. mini marshmallows
3 tbsp butter
sprinkles (optional, but strongly encouraged)
Steps:
1. Line a tray with parchment paper and find a mixing spoon and spatula and lightly spray both with cooking oil (spatula/spoon to avoid sticking later).
2. Microwave the marshmallows and butter for two minutes, stir, and microwave for another two minutes.
3. Quickly add in both cereals and mix with the spoon. Then, pour the mixture into the lined pan and flatten with the back of the spoon.
4. Let sit for about 10 minutes, or until solid, cut, and enjoy!
